Cranberry Chipotle Barbecue Sauce

Adapted from Michael Ruhlman’s Charcuterie

  • 1/2 cup minced white onion
  • 1 clove minced garlic
  • 1 tbsp olive oil
  • 1/2 cup Haxan Cranberry Vinegar
  • 1 tbsp minced chipotle peppers in adobo sauce
  • 1/2 tsp coriander
  • 1/4 tsp allspice
  • 1/4 tsp black pepper
  • 1/4 cup brown sugar
  • 3/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsbp molasses
  • 1/2 cup water

Directions: Saute onions and garlic in olive oil until nicely browned. Add vinegar and bring to a boil. Reduce vinegar by half. Add remaining ingredients and reduce heat to a low simmer. Cook for 15 minutes. With either an immersion or regular blender, blend sauce until smooth.
